Thoughts needed. Want to get AI involved on reading emails and uploading dates to calendar

Would it be possible for AI to scan general PDF documents as the emails come in with the attachments and auto upload the dates to Google calendar for example?
I.E. I have Microsoft 365. Email with PDF attachment comes in. I want AI/program to scan PDF and attach it to the calendar whether Microsoft Outlook calendar or Google.
I've looked at Zapier but unsure if AI is good enough.
