Wife and I spent a similar about of time in Italy. We had the pretty standard Rome, Florence, Venice plans. What made it easier for us is that we flew into Rome and out of Venice.
Few notes:
Rome has amazing history but Florence stole our hearts. It’s simpme the ideal hub for many days trips. Do yourself a favor and spend a day in the Italian countryside and enjoy a glass or bottle of Brunello.
Pisa was worth the detour however Verona ( Juliet’s balcony) was a complete waste of time.
Ferrari museum was a car lovers wet dream.
If your travels take you to Venice a day boat trip to the either island of Murano or Burano is worth the time. These two islands are home to some world class glass artisans that will amaze you.
Italy won’t disappoint

We did the opposite and I agree that it's a better way to travel a country like Italy if you arrive and depart from different cities.
We alo fell in love with Florence and the Tuscan countryside. We had an amazing vied of the Ponte Vecchio from our hotel balcony. I suspect we'll feel the same way about Piedmonte (northern wine region) when we go again in September.

Airbnb 100 yards from the duomo
Train to Venice and Airbnb in a random neighborhood.
Awesome trip.

I’ve heard mixed things about AIR B AND b in Europe
One friend said his stay in Paris was terrible because there’s no AC
As anyone knows who’s been to Italy or France in summer it’s very hot
Did you have air conditioning?

You can specify air conditioning as a requirement when searching Air BnB listings. I’ve had excellent ABB lodgings in Ireland, England, and France.

I was worried and had no issues with abnb in those three places. As stated above, you can filter out places with no AC.
Also, read all of the reviews. I read tons before we settled on our places.

May 1st is a national holiday in Italy called Primo Maggio, kinda like Labor Day here. A lot of museums and sites were closed that day when we went. Bonus feature, there's a big free outdoor concert that day in Rome. I'm sure there are other events planned in other cities for Primo Maggio.

We did VRBO in Rome and Italy without any problems. In fact, our hosts were way better than could have imagined. Our host in Venice met us at the train station with her son, and he carried our luggage all the way to the condo we rented while pointing out restaurants, grocery stores, and answering questions along the way. You'll find that most rentals are way smaller SF than you're accustomed to, but you really don't need much since you'll only really be there to shower and sleep. Bonus use of an Italian moki coffee pot or kitchen. You do need AC in the summer for most of Italy.

We just got back Sunday night. A week at a Tuscan villa, then 3 nights in Florence and 4 nights in Venice. Had a great time.

So the wife and I are considering Europe for next year. Not to derail thread, or pry too much, but is a $10k budget plenty to really enjoy ourselves for 10-12 days?

Other than the airfare, I found the prices in Italy much cheaper than in N.Y., S.F. or even Disneyworld. We were eating in excellent restaurants every night that were not as expensive as many restaurants in New Orleans.

Was thinking it was plenty, but hadn't started pricing things and haven't been to Europe since I backpacked in the late 90's.

I’m not a fan of chain or luxury hotels....small, family owned pensiones, b&bs, or rental apartments are good values. So you can spend way less than $1K a day (I’m not counting airfare). If you want to economize, go in October...cheaper prices and the weather is beautiful.

That'd be the plan. Maybe one or two nights at a nice hotel, but mostly AirBNB. We're looking at late spring right now, but pretty flexible.

A $10k budget for two for that amount of time in Italy is fine. Dinners do tend to be more expensive in the cities (I'm talking about you Rome).
