Quick Colorado solo getaway suggestions?

While wife and kids have a dance convention in going to take a solo trip to Colorado. Round trip direct flights were only 65.
Got a deal truth Costco on a 4x4 as well.
Now looking for a cabin. I really want to have a place where I can wake and bake and go hiking all day, then be close enough to one of the four core cities to get to restarants or shops.
Familiar with the area between Estes and C Springs. Have also stayed in Pagosa, Steamboat and Durango.
I have a 7:40 flight and a rental return so I don't want to be so far away it's a hassle to make.
I just haven't been recently so maybe someone knows a place.
Also dining recs (nothing fancy) would be nice.
