In South Carolina I would go to Scott’s Bar B Q in Hemingway (it may be temporarily closed) or Sweatman’s that’s near Holly Hill.

Listen to the local AM radio stations to find out what is going on and go to the fair, festival, ball game, gun show, - whatever is going on. Go to church on Sunday morning or Wednesday night.

Stop in any bar and shoot some pool. Stop by the bait & tackle shop - the one that’s been there a while - and chat with the owner.

The easiest way to avoid the tourist spots is to not go to them.

Try Cloudcroft/Ruidoso, NM. In the Sacramento Mountains of NM, weather and hiking is great and crowds are few. Lots of wildlife and scenery.
People are friendly. Drive is 12 or so hours so there is that.
