The easiest way to avoid the tourist spots is to not go to them.

Try Cloudcroft/Ruidoso, NM. In the Sacramento Mountains of NM, weather and hiking is great and crowds are few. Lots of wildlife and scenery.
People are friendly. Drive is 12 or so hours so there is that.
