Plenty of good suggestions above, thought I'd add a few more. I think I may have had the best steak of my life a few weeks ago at the Cabernet Grill, everything there was top notch. Go to breakfast at Old German Bakery. Do the tourist thing and walk the strip, grab some brews at the breweries if you're not into wine (like us). Walk through InSight Gallery, some beautiful stuff in there.

lady bird is an ok little golf course
eat at the airport diner and watch planes
go to the race barn and play a pick 5 at gulfstream
