I’ll add the Philippines to your list of consideration. It can be a bitch to get there, but there’s some beautiful places, it’s cheap and the people are great.

OP, if you do go to Thailand, and you are in Bangkok, go to Soi Langsuan for dinner and please report back. Thailand is on my list, and this restaurant is a big part of the reason why. The chef, Gaggan Anand, was featured in Season 2 of Chef's Table on Netflix (I highly recommend that show) and this restaurant was voted the best restaurant in all of Asia.
It's very expensive by Thailand's standards, meaning the full tasting menu is a whopping $160/person. It looks absolutely incredible.
