I also love Gaiman (AG onTV!) but rothfuss writes beautifully. Gaiman weaves a way better story together, without a doubt, but his writing is plain.

Utter fricking nonsense.
When his prose is plain, it is meant to be. And even in its plainness, it is thoughtful and beautifully written.
Don't get me wrong, I think Rothfuss is a good writer, but the love affair people have with him is hilarious and confusing to me. He's just a guy who can turn a few phrases. And Kvothe is a lying sack of shite character, which is amusing at first, but ultimately just annoying. Particularly in Fairy frick Land.

Bernard Cornwell is my favorite author. Saxon series and his King Arthur series are wonderful

I really can't suggest the stormlight and king killer books enough. There are currently 2/3 planned done in kingkiller and 2/10(maybe?) for stormlight. Sanderson, who wrote stormlight, has around 5 different fantasy series that all have small tie ins to each other that are supposed to be a big pay off down the road. It's an awful lot of reading for a small amount of tie ins but it'll be crazy when/if he pulls it off. I've enjoyed everything he's written, but stormlight is a several steps above his other series.
The Ender series is mentioned several times here. I can only speak for the first one, but it's a fantastic sci-fi book. I even enjoyed the movie. Don't cheat yourself there though. Absolutely read the book first.

I tried and tried after reading how much people love Butcher and those books. Similar to the dark tower, I couldn't get through book 2.

I'd agree with the folks recommending Malazan, but I'd be careful with the first book. Many folks recommend starting with the second book of the series because the first can be hard for people to get into. I loved the first book, but Erikson doesn't do infodumps and just throws you into the world with no spoon feeding, so some folks can get pretty lost and annoyed. It's probably my favorite finished recent fantasy series though.
I also highly recommend Joe Abercrombie and Mark Lawrence.

The first Dresden book is a big pile of meh, the second Dresden book is pretty average at best, but the third book picks up quite a bit and the books 4 and on are fantastic. He really improves by leaps and bounds as an author as he goes along.
Now not liking the Dark Tower I can't help you on, books 2-4 of the Dark Tower are fantastic.

They did a good bit of damage to the ending Act of Angels and Demons, and COMPLETELY changed the ending to Inferno. It's been a very long time since I saw Da Vinci code. Now, I did enjoy the movies for entertainment purposes, just as them being their own stand alone thing. Tom Hanks was the perfect cast for Robert Langdon.

That's true Inferno ending was changed.
Davinci Code movie was widely hated and I don't know why. I thought it was fairly true to the book.

My major problem. I had no basis for anything that was going on. So I didn't give a crap about anything that happened even if it was told in a cool way.

This is a solid point. Be prepared to not know what the hell is going on for a while. You'll piece it together over time and the payoff is totally worth it. Deadhouse Gates is one of my favorites of the series.
