Vandy allows the SEC to avoid public records requests (it's why every BCS conference has a private school). They would have to be replaced by another private institution or contracts (like those between the SEC and CBS/ESPN) and other dealings would be in the public domain.
EDITED TO ADD: This is why a public records request unearthed the full Longhorn Network contract between ESPN and Texas but no one can get their hands on the SEC ESPN contract.

Just a few reasons why that is a terrible idea:
Vandy is a charter member of the SEC and the SEC fans love tradition. That is one of the reasons we are so loyal (ie valuable).
Vandy and the most academically pretigious school in the conference.
Vandy provides something of a much needed break in the annual bloodbath that is football season.
Vandy is in Nashville, which is a great city to go visit.
I'm not sure about GerryDinardo's post, but if that is accurate, that is another excellent reason...

the funny thing about Vandy other coaches in the SEC use, especially Houston Nutt which is probably why he lost to them a few times at Arkansas.
