any recommendations on wood species?
gonna polyurethane it, no stain (or paint obviously)

Is this going to be like a typical cabinet box with a typical countertop? Or are you using a "slab" of interesting lumber to make the countertop?

I like Sapele. Not crazy expensive, can have really nice figure.

I would do rift sawn white oak. Really dense, anti-microbial, handles water really well, and can be stained/finished with any look that you would want.
