Fudgy Chocolate Layer Cake

1 3/4 cups cake flour
1 cup unsweetened cocoa powder
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1 1/2 sticks butter, softened
2/3 cup sugar
2/3 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla
1 1/2 cups buttermilk
FROSTING
1 stick butter, softened
1 1/2 cups confectioner's sugar, sifted
3 ounces unsweetened chocolate, melted
2 teaspoons vanilla
chocolate shavings to garnish

1. Preheat oven to 350. Grease two 9" round cake pans. Line bottom with wax paper. Grease paper and sides of pans and dust with flour.

2. Sift cocoa, flour, soda and salt. Set aside. In another bowl, beat together butter, granulated sugar and brown sugar at med speed till light and fluffy. Add eggs, one at a time, beating well after each. Add vanilla.

3. At low speed, alternately beat flour mixture and buttermilk into butter mixture till blended. Divide batter into pans and bake 25 to 30 minutes. Test till done. Cool for 10 minutes and turn out onto wire racks. Remove paper and cool completely.

4. FROSTING; Beat butter and sugar till light and fluffy. Add melted chocolate and vanilla and beat till shiny and smooth.

5. Layer and frost cakes. Let stand at least 30 minutes. Sprinkle with shavings and serve.

Now if all that has you saying " No F... way"
Then go and buy one of those cake mixes (I like the ones you add butter to) and save yourself and your kitchen the armageddon....Baking is a whole new world and precision is everything and even then you need a little luck....Good luck

NO WAY am I going to buy a box. I am going to try your recipe Friday!

I have had success with lots of bread and savory dishes, I am just not a big sweet eater so I don't bake sweets, but I want a good cake recipe for my kids to always rememeber and want mommy to make.

This would be the one...after you make it and watch their smiling little faces...you may ask yourself....WAS IT WORTH IT? Are they really going to ask me to go through this again? Are they each going to want one for birthdays and hollidays? Will I ever get this kitchen clean? How did that flour get back there?

I have more respect for a Pastry Chef than anyone when it comes to the kitchen.

Texas Sheet Cake, very labor intensive but worth it.

Cake
2 cups flour
2 cups sugar
2 sticks of butter
4 tablespoons cocoa
1 cup water
1/2 cup buttermilk
2 eggs
1 teaspoon baking soda
1/4 teaspoon cinnamon
1 teaspoon vanilla

Icing
1 stick of butter
2 tablespoons cocoa
6 tablespoons milk
3/4 box of powdered sugar or use all of it
1 teaspoon vanilla

Directions
Preheat oven to 350

Sift together flour and sugar; set aside.

In saucepan, mix butter, cocoa and water; bring to a boil.

Pour over flour and sugar mixture; blend.

Add buttermilk, eggs, baking soda, cinnamon and vanilla; blend well.

Bake 20 minutes at 350° in a large jelly roll pan or sheet cake pan. I use a 9x13 and bake about 30-35 minutes. Its a very moist cake, just keep an eye on it.

Frost while hot!

For icing, 5 minutes before cake is done, mix butter, cocoa and milk; bring to a boil.

Remove from heat and add powdered sugar; stir until blended.

If needed, gradually add more milk a few drops at a time as needed for consistency.

Add vanilla.

Beat well and spread on hot cake.

ETA: Correct the cinnamon. Please do not put 1 tsp in the cake, just a pinch..if you wnat to. I make it with and without.

If you want very rich (and I mean VERY) look for FLOURLESS chocolate cake recipes. Most will have a liqueur in them and all are ridiculously decadent.

I make this cake (I don't use the cinnamon though) several times a year. Most people think it is iced brownies and are pleasantly surprised when they taste the cake. It has a real from scratch flavor.

I also use almond flavoring instead of the vanilla just because that is what my family prefers.
