Made this last year and Saturday decided to try it again, but with a few tweaks. Recipe mostly came from John Besh’s my New Orleans cookbook and Charcuterie by Ruhlman and Polcyn.

Cooking down onions in Lard. Smells like my grandmas house when I was a kid.
I decided to smoke the pork shoulder for a couple hours before adding it to the pot.

God I just love spreadable meat. Looks great.

I've never had or heard of Rillettes. That looks awesome!
