I got two down…seems like it needed mustard or hot sauce…something.

did some business with a canning facility and importer in SW Houston

good Christ did place smell terrible

but the can of spanish Sardines he gave me were incredible

never had the balls to try the canned smoked catfish that we was making

How did you eat them? Something was missing for me…was just a little dry and bland.

I've had fresh sardines in Spain which are amazing and I've had canned fish like mackerel that were amazing so I'd try that.

I have no idea if this is an actual recognized pairing, but canned sardines on townhouse/ritz cracker with capers and a bit of cream cheese is my go to. Also I have added chili crisp on top of that, which works well.

The ones my dad ate were packed in mustard, and they were much smaller.

Give me some saltine crackers and mustard or hot sauce and id clear that can.

Pickled sardines or any of those other foraging high oil fish is also very tasty.

Use to do it with smelt in AK.

Agree with a couple other posters, good quality sardines are damn tasty and I do prefer with mustard and a dash of hot sauce.

WAY BACK when I worked shift work, I loved to pop open a can around midnight and listen to all the bitchin and complaining...bunch of pussies.

I'd butter the bread, take a filet out and garnish it with the shallots and chives. If I felt it was too dry, I'd mix the the rest of the filets up with the oil in the tin, then repeat the process.

Edit: something acidic like a tomato slice or pan con tomate would be preferential.

I should have done that from the get go. By the time there was one left, wife ate the other, there was just too much oil.

IMO, one of the best canned sardines made. Imported from Portugal, Ingredients include: 2-4 huge sardines, spiced olive oil, thin sliced cucumber, 2-3 chili peppers, thin sliced carrot, cloves, black pepper.

I have to say --- the canned smoked oysters and mussels from Trader Joe's are sneaky good at a modest price point.
