I know there's alot of Cajun influences here but It's really not even close... Oyster rockerfeller, fried shrimp poboys, grouper almondine, There's plenty more.

BBQ is a distant 2nd.

I had 3lbs of Viet cajun crawfish and a half dozen grilled oysters for lunch and I can't think of a meal I would like more.

Yep

A good shrimp po-boy is near the top of my food chain. A grilled YFT sandwich or a grilled grouper sandwich never gets old. How do you beat a simple, fried spec? Grilled reds on the half-shell over wood. How 'bout some crab cakes! Almost forgot catfish and crab-stuffed mushrooms. Grilled oysters. Stuffed flounder. And have hardly touched on so many great Gulf of America fish - cobia (aka lemon fish aka ling), snapper, etc.

I love seafood.

ETA: Kartchner's crab pie is now on the list. I love seafood.

Also not a fair comparison. Like you’re not choosing fish, shrimp, crawfish, or oysters. You’re choosing all of them, compared to saying “meat” and getting beef, chicken, pork, lamb, etc

I’m more partial to Mexican. I’ll never get tired of chicken fajitas.

But I never met a seafood dish I didn’t like either.

Crawfish bisque done right is the king
Jumbo lump crab cakes
Lump crab stuffed softshell crab
Eggplant Napoleon, with shrimp, crawfish & crabmeat in a white cream sauce
Crawfish enchiladas
Seafood gumbo with shrimp crab & oysters

Enough! Seafood wins, I'm hungry

And I make all the above very well... I want to open a Cajun Restaurant & Specialty Meats with a boiling house, but outside of Louisiana

I had some seared sea scallops and shrimp last night.

Lobster, crawfish and shrimp pasta the night before.

We eat a ton of seafood in my house.

But steak is still king.

Aren’t the variations in Mexican food simply a nearly identical blend of ingredients with the primary variation the size and type of tortilla?

Rice and beans. Same rice. 2-3 options for beans.

Tex Mex is. A shame really because the various regions of Mexico all have different styles, ingredients and techniques. Very diverse food culture.

I agree. It’s also not lost on me that all of my first generation American friends and coworkers living along the Southwest border essentially eat and cook TexMex. I used to think it was just white people that considered it Mexican food.

Even Mexicans living in the US consider TexMex to be Mexican food. The nuance is they will embrace a tomatillo salsa and some claim to roast and grind their own peppers. Some eat jicama with chile powder to sift their authenticity. I also hear they occasionally buy cotija cheese for a few dishes. But they make tacos, enchiladas, fajitas and carne asada the same way it is served at TexMex restaurants.

Yes seafood is the best over all. does it have the "best dish". probably not.

my little fun "dinner" question when chatting bout food with folks is the "if you had to give up all except one protein type, which would you keep?" . my answer is always keep seafood.

Well yea. If you chose "seafood" you'll get tons and tons of varieties of fish, crustaceans, bivalves, etc etc. You could probably eat a different animal every day
of the year. If you chose pork, you're eating pig everyday.

Fajitas literally means skirt steak…not chicken.
