Just saw this in the frozen seafood section at Zuppardo's. Cost $3.69.
I guess you could enrich your stock for gumbo, ettouffe or the like?

Boulettes.
Then I would make a gravy.

I was assuming it was a purée of crawfish tails, not some soup or stew.

As a base for a crawfish boil soup. Corn, sausage, potatoes and crawfish tails.

Mix with mayo, creole mustard, green onions, parm and mozzarella. Smear on French bread and bake

That sounds delicious. I’ve eaten the best cornbread dressing that had a cup of it in the recipe.

I just assumed it was tail meat - probably made from the debris left over from the processing of the crawfish. Could be great if it had the fat in it.
On a side note, I once saw a cooking show from New Orleans where the chef put live crawfish in a food processor and whizzed away. I was kind of shocked TBH, but I guess it's no worse than dropping them into boiling water. I think they were making Crawfish Butter.

Season your corn bread batter with it

More than likely it's a crawfish processor using a meat bone separator on the heads and claws. It makes a flavorful puree out of what would be waste. Lsu has been toying with the idea for years

I too would use it as a base to make crawfish pies... prepare a dozen and bake with egg wash coating when hungry

Make a mold with it, like a shrimp mold.
