Beef Jerky

What kind of meat can I use to make jerky out of? I usually use deer, but I recently ran out of deer for the year. Until November Im stuck craving home made jerky.

I get the beef round roasts from Sam's.

It needs to be a really lean cut of beef, totally trimmed of all fat, like an eye of round or a rump roast. Cut it against the grain so it chews easily.

Bottom round roasts are perfect for jerky. I trim them, freeze slightly and run through the meat slicer. Sam's is your best bet for good bottom round roasts.

Anybody have a good recipe? I have a propane smoker and a neighbor told me he makes his own. I'm thinking about trying it out.

I just get store bought marinades and let em marinate over night, then throw em on my dehydrater. Not the fanciest, but damn tasty.
And I use bottom round, unless I'm doing em that day, in which case I'll use the discounted meat because it must be sold by that day.
One last thing, for a 'homemade' style jerky, google Alton Brown's recipe from good eats.
