I've got an extra eggplant. What to do with it?

Just made Eggplant Lasagna now I need something to do with the last eggplant that I didn't need. Ideas? Stuff it with Sausage and cheese? What?

My grandma used to slice into what looked like french fries, batter, and fry them and make some sort of shrimp sauce to put over them. Grilled eggplant as a side dish is really darn good also.

Cut the last one up into large chunks. In a ziplock, put 1 cup olive oil, and on envelope Lipton onion soup mix. Mix that together really well, and throw in the chances of eggplant. Let it marinate in that for about an hour. Cook the chunks on the grill until they are tender.

Tonys tavern used to have an eggplant ap that was awesome... Simple but good.

Sliced thin, fried crisp with corn meal... Had romalade or ranch to dip in.
I miss that old place.

This is my favorite way of preparing eggplant. My grandmother always fried it like this...corn meal, salt, & pepper. So simple, but so good.

Thin slice, dredge in egg wash then italian bread crumbs, fry in olive oil, sprinkle with parm.
