I can recommend Poverty Point and Fountainbleau of the ones listed below. PP has some cabins actually over the water. Anything in the state is only a few hours away.

Lake Natchez.
Only a couple hours north. Nice cabins on the lake for a good price. Really good fishing if you decide to go that route. Also a casino nearby.
Usually make a trip once a year with several bass 6-9 lbs being taken over the last couple years.

Check out Little Black Creek in Lumberton, MS. It's pretty nice out there.
