Because that and HFCS is in literally everything.

The only time I use it is for 1 dish that requires it. Otherwise, I wouldn't use it regularly. Most of the information I have read about it is not positive.

Soybean oil is highly processed, like the other industrial vegetable oils: cottonseed (which is also hydrogenated, so even worse), corn oil, canola/rapeseed, etc. They're made in factories, and solvents are used to extract the oil. Something like half of veg oil produced worldwide is soybean oil.

A less processed choice is sunflower oil, or avocado or olive oil. All three are vegetable oils produced without solvents, from crops grown as food (ie, not industrial extractions of crops grown for other purposes).

Soybean oil is used in a number of the jarred rouxs. So is cottonseed.

I assume that peanut oil is pressed as well?

If you can find cold-pressed peanut oil, it is minimally processed. But, that's not the stuff you're buying in 5 gallon jugs at the outdoors store to fry your Thanksgiving turkey. Most peanut oil is highly processed/refined.

I love avocado oil in cooking. It's healthy, has a high smoke point, and a neutral taste. It's also fairly expensive compared to other oils.
