Backpacking ideas for this Oct-Nov?

If everything works out looks like I will have an employment gap starting sometime in Oct, could last a month possibly more. Instead of sitting around town I want to travel, where should I go? Was considering Western Europe area (Ireland, Scotland, Spain) or head back to SE Asia.
Any ideas? Trying to figure out weather for that time of year and also any Covid restrictions.

Buses are really cheap in South America. Pretty comfortable too. We rode from Buenos Aires to Valparaiso in this big fluffy seat that felt like a recliner for $6. The USD goes a long way down there also. We ate like kings in Buenos Aires for $25.
