Keep it simple.
Trim it, rub it, 235 until 195-200 internal.
If you are in a hurry. Use the Texas cheat and wrap it at 165.
If you are in a real hurry, 235 for two hours and then into the oven at 350 until internal is 195-200.
You don’t have to over complicate these things.
I don't think you understand...

Shooters shoot.
Hiw we all learn what to do and what not to do.
Too many people sit on the sidelines and wait for someone to tell them how to cook.

You posted your brisket method.
I have cooked plenty of briskets using a traditional method.
This was an experiment to test this guy's method.
For science...

Smoke Trails video
Saw one of his videos about pulling a brisket at 185-190° vs 200° and he swore the 190° was better. The 200° looked way better. It was pretty obvious he is just in it for the clicks so good for him. I'm sure there are 195° briskets that come out superior but this particular video wasn't it.

At least you posted and followed up with pics. Most don't, so kudos to you sir.

My own experiments show 197 is where I want to be.

We learn more when we fail than when we succeed.
I leaned this method is not for me.

I have a similar method but no steaming. Wrapping and steaming is pointless

Thanks for sharing. I'd seen his video and was mildly intrigued but not enough that I wanted to try it...lol. And now you've confirmed that.
