Wahoo is in the elite tier of gulf fish along with Scamp, Pompano, Flounder, yellow edge, cobia, and tripletail among others
A step right below and you get into Mahi, black/gag/red grouper, red snapper, yellowtail snapper, mangroves, Vermillion snapper, triggerfish
Amberjack, specks, redfish, sheephead fall into that next category
King Mackeral a step down from that (though it's delicious smoked in a dip). I'd throw mullet in this tier as well
All of the above fish are delicious. I'm excluding Tuna since they're a different class of fish altogether
Then you have Spanish Mackerel, which are only good for cut bait.
Wahoo is fricking prime. It's one of the best fish in the gulf for making fresh ceviche. To call it "unrivaled" is almost as crazy as comparing it to amberjack though. Both statements are asinine.

the best fried fish is bream. but, no one speaks too much of em because of the size. but, imagine if you could have a fillet of bream the size of the soul of a tennis shoe? holy cow.

Of those, grouper is the only I'll eat. Never cared for catfish, swai, or tilapia.

Out of the fish you listed, only one deserves to be named in a topic titled "Best type of fish" and that's grouper. It certainly isn't the best though.
Offshore: Red Snapper, Wahoo, Golden Tilefish, maybe grouper
Inshore: Speckled Trout fresh out the grease, redfish, flounder.
