Best way to make pita bread pockets?

Is there a trick to getting them to pocket up, or making it easier to cut a pocket in them?

Haven't had pitas since I was a kid, so trying to bring it back.


Also, do alfalfa sprouts just not exist anymore? Haven't seen them in forever.

Alfalfa sprouts and bean sprouts have gotten a bad rap for a few years now due to frequent salmonella and E. coli outbreaks from them. So, they've fallen out of favor.

My wife heats them directly over our gas range and they puff up. Take a break knife to the edge and open them up.

we get fresh cut sprouts (bean, sunflower, etc) at the Hammond farmers market. If there’s a market near you it’s worth a try

I saw alfalfa sprouts at Sprouts just this week.
