I could taste the eggplant just fine, but you could deep fry them in strips or even circles probably. You could cut your chunks larger as well. I found the eggplant to be delicious and creamy. Not greasy at all.

I used lard last time. Peanut or corn would be fine too. Anything you fry fish with

I use peanut oil. Olive oil would definitely not work.
