I've been in hundreds of kitchens and a lot of them were dirty but none were crazy (rodents,etc.) dirty in my opinion. Many of them you could ski (or slide all over) in with all the grease on the floor though. Really had to watch your footing in the kitchens.

The worst ones were in New Orleans because a lot of restaurants there are so old. Some downtown were so cluttered you could barely get though. Wish I would have been into cooking back then. Could have picked up some tips maybe.

I work in the food industry. Some of the restaurants you think would be clean are the worst ones! I wont name them but you would not believe what some of these places look like.
