Holy moly that was delicious! That was 1st time I cooked that and it came out great!
What’s some other cuts of meat I can use with this dish? Assume pork chops would be great also.

We always had bone-in pork chops with beans.

I'm not sure exactly what the op means, but when I think gravy steak, I think seven steak because it makes the best gravy.

It’s kinda like a 7 steak but smaller bone. The pack I got was 2 in a pack and the size of a medium frying pan.
I browned them on both sides then let them simmer for 1.5 - 2 hours with fresh chopped onions. Best meat I’ve cooked in a while.
