I bought an enamel coated cast iron pot for my daughter for Christmas from her shop and I picked up a small bottle of her garlic butter sauce and it's pretty damn good. It's pretty much exactly like papa john's garlic butter sauce.

Boudreaux's Backyard is another good one. Keeps things pretty simple and basic and always looks good.

In that area, this is actually really common. I'm from around that area and that's how my grandparents made their gumbo, how my dad makes his gumbo and how I make my gumbo. Season the raw chicken really well and after you have your dark roux and trinity in the pot, put the water in and then your chicken and fresh sausage.
Guess I can see how it is weird, but its the way we have always done it.

What’s wrong with that?
I brown chicken for a jambalaya and for a grease gravy. Sometimes for a fricassee, but don’t think I ever have for a gumbo.

From that area as well and thats how we do it . People east of the Mississippi River tend to brown their meat for gumbos.

Grew up in Acadia Parish in 60’s. It’s how we/they made gumbo then and now. They put baked sweet potatoes in the bowl too.
