That is one of the difficulties. Greater New Orleans is only so big and almost every team is vying for sponsors and donors within the same pool. The bigger teams are thriving by being older, having extended networks, and/or having independent wealth.

The goal is to put together a team that is not afraid to ask for donations throughout the year and to be willing to put in at least 4 days of hard work. The rest will fall into place.

As a member of a smaller team comprised of mainly friends from tailgating and other assorted life connections, I will say that we get this fact and have no desire to spend the money to compete with the big boys. Also we are ok knowing that even when its dry like last year we probably won’t start getting people to buy food till an hour after the gates are open. Our goals each year are to: raise at least a couple thousand dollars (all of it counts!), prepare some good food and occasionally place in the competition (we did get a top five in one area this year), hang out with friends and family, and have fun.

We love that this event allows for both big restaurant/company teams that blow it out, and smaller groups where each members puts in to cover the cost. That said we are also fortunate to have someone on our team with a company connection that allows us to use their large trailer grill and cajun microwave.

We do want to try and do a few other events in the offseason to raise more money, we would love to raise $5000 total for next year. But mud and all we had a blast, raised some money, and got out the house and got drunk Friday and Saturday.

I will say all that feel good stuff aside, IT’S A LOT WORK, especially for the small teams. But worth it.

This is all very accurate.
My team has a great network of vendors that we use in our restaurants and are generous with food donations.
We don't have any big$$$ supporters and have to fund raise throughout the year to keep this from being an out of pocket expense.
It costs us in the neighborhood of $5000 to put our booth together.
We don't do the event as an extension of any of the restaurants we are affiliated with because its a fun hobby and we'd like to keep it that way.
Every year it does get a little cheaper/easier because you've accumulated more gear and experience.
If there are no new team openings try and volunteer with an existing smaller group. Many new teams are formed in exactly that way.
The fest continues to grow and will likely be around for a long time.
Participate, donate, volunteer.
Just be a part of it and have fun!
