Literally like crap? My first batch of golden sour had a bit of fecal smell to it for the first few months, but I think it may be turning a corner. I debated pouring the whole thing, but figured a beer designed for 12-18 months might hit some rough patches along the way...

no, not literally. Just tasted bad. I fermented it pretty warm, and the abbey ale yeast made it pretty "alcoholy", then it got really dry before developing much character.

did you use pedio in yours? Mine is strictly sach, brett, and lacto.

I used White Labs Abbey Ale to primary, then added a starter of a bunch of dregs. It does have pedio.

I take it back, mine has a bunch of dregs as well.

Yea I couldn't tell whether it was just normal Brett "mousey" that might clear up or something that would be a batch ruiner. I think it's going to be ok though; it's fading and the second batch didn't have that flavor on the same cake. This was wyeast 1214 and Roselare blend copitched with a range of dregs so it has a dogs breakfast of bugs and yeast.

Dry hopped my brett saison sunday with 2.25 oz. Nelson Sauvin.

Anything going on in the homebrewing world lately?

My home brewery is in a state of flux: I am switching to a 3500W induction cooktop so that I can set up a dedicated non-kitchen space to brew. It uses a weird NEMA 6-20P 220V plug, so I have to change an outlet and a breaker in my box from the current 40A range outlet. Hopefully this weekend I can find the time to get that done. I have a fresh IPA on tap though, and I am going to put the Dreamsicle berliner into a keg this afternoon.

Do you purge your carboys with CO2 after dry hopping or checking gravity/ph?

I did this, this weekend. Kind of a pain in the arse having to reach down and pick up 2 full 5 gallon carboys bring them to the beer fridge, purge them, then put them back.

Looking into getting one of those hand CO2 chargers.

I don't purge carboys after gravity readings, but I always co2 purge kegs before transferring beer into them and I do pressurized co2 transfers from my conical to kegs for clean hoppy beers.

I purge kegs as well, but with the sour and the brett beer, i decided to purge the carboys as well, as i took 2 samples from each of them in 3 days.

I'm pretty good about leaving beers alone until they're done; I figure there's not much reason to steal gross samples now and screw over future me of good beer. The exception is clean beer in my chronical: I dump trub after 24 hours then I check gravity with the sample port every few days then put it into kegs or secondary ASAP. I only have the one conical though and lots of beer to make :)

I'm the same. The first time i opened the bung to the carboy was 3 months after i brewed it. I only opened it again, because my brother wanted to try some, and i opened the brett saison, to give him a taste of that one as well. The saison is being kegged thursday.

All sorts of this here too...

I didn't realize how much brewing shite I had accumulated over the years until I had to pick it up and move it.

I ditched my fermentation freezer before the move. It was old and unreliable. Need to start searching craig's list for a new one soon.

Also, does anyone have any instructions on how to make one of those keg bottle fillers that incorporates a racking cane through a bung (and i think they have a pump needle to allow oxygen to escape after filling)?

lol. Finally getting around to the 5-25 session.
They really do baselessly hate on cloudy IPAs all the time to the point that it comes off wrong.

Tasty does seem to be coming around on them though.

Brewed a TropicAle and a Cream Ale over the weekend without the help of a pump (because it's tripping my GFCI) and burnt my leg carrying a hot kettle.

So not my next batch, but the batch after, i plan to brew my first quick soured gose (with cactus and cucumber). I was thinking of following the milk the funk recipe and adding the cactus and cucumber either to the keg, or just before kegging.

Milk the Funk Gose

And i was reading up on pre-acidification

How to Pre-Acidify

And was wondering if any of you pre-acidify the wort? Will a tbsp of Phosphoric negatively impact the sour? How long do you boil after the souring is complete?

Yeah, and i agree they should probably have a separate style for the cloudy types. I mean if you are judging all IPA's to 1 category, yet there is a contingent of brewers making cloudy IPA's, then they will get marks off for appearance (competition wise).

Just throwing this out there: I've had three batches of brew that if kegged come out semi Ok. People tell me that the beer is good but there's something in the mid palate of my beer that is tainted. I taste it too. It's hard to explained the taste. It's just a dirty taste. For my citra DIPA I kegged half and bottled the other half. Sure nuff, the keg tasted tainted. I just cracked a bottle and it tastes wonderful. My keg lines are brand spanking new and were cleaned with PBW and flushed with hot water, then flushed with starsan. My co2 from airgas is producing off flavors into my beer. I know la homebrew fills tanks. Looks like I'm going to get a new tank and let them fill it. Any other places that you guys use that I can rely on to get a tank swap that won't taint the crap out of my beer?

They fill tanks now? Sweet

As far as off flavors from CO2, i wouldn't think that the tank could make it taste bad, unless your CO2 lines are dirty, or somehow, the inside of your co2 tank became corrosive, but i'm not sure how that could happen without you noticing a leak somewhere. Your kegs could be dirty as well, or your keg posts.

Have you cleaned out your faucets too? Not saying its not your tank, it just seems odd if so.

On a semi-related note: My poppits for my beer out post doesn't fit anymore. It was always loose when i put it on, but snugged up after tightening up to the keg. Well, i put some CO2 in the keg to make sure i didn't have any leaks, connected the beer out line, then removed it, and water shot straight up into my face in the air, before i remembered to disconnect the co2. Good thing i only had water in there, and not beer. SO i'll be heading to LA Homebrew today and either getting a new post or a poppitt.
