Well, so far, this one is much better out the gate than my previous neipa's. I'm crediting that with being fresh hops, and not just using the bulkhops out of the freezer.

I just pull some pictures or cartoons from the internet and do a little paint to put text on it. Nothing special. This one is an ode to far side, and my troubles making an NEIPA I am content with. I may have finally done it this time.

On another note, bottled the sours and moved the French oak spiral to the lambic. The lambic is smelling just how I want it to. Only 3-4 more years before we can drink it.

What's new on the homebrew front. THe thread has gone dormant!

Still swamped with kids. No time for an 8 hour brew day. Have been indulging with beer shipping from trillium, burial, and civil society.

Been traveling the last month and a half for work. Want to brew again but still need to finish my current keg. Wife doesn't care for the latest so I'm on my own drinking it.

Not sure on the next, but probably something on the light ale side for summer.

Brewed last week for the first time in months. I literally have only brewed twice in the past year. which means i have only brewed twice on my new system. Needless to say, my new system is a breeze to brew on. The first run was hard but i planed better this time and i thoroughly enjoyed it.

It pushes me to brew more.

Finished off my old beers 2 weekends ago, and put my Kolsch and Citra IPA on tap. Couldn't force-carb them because this damn Taprite regulator knob keeps stripping. Luckily there customer service is awesome, and quickly shipped me new parts without even asking a question other than my address.

Probably not going to brew any time the rest of this month. Going to just chill and enjoy these beers slowly. Got too much yard work to do, trips to take, and golf to play for the next 3 or 4 weekends.

Been making a bunch of these instead of buying Trulys or Ranch Waters with just filtered water from the fridge directly into the keg and adding whichever alcohol I'm feeling at the time.

Anyone make an italian-style pilsner? From what i understand, it's simply a german style pilsner highly hopped.

What are the preferred hop varietals? Want to make one this weekend.

I would assume noble hops like Saaz, Tettnanger, Hellertau.

I've never done hard seltzer, but I've done plenty of plain seltzer. I try and get close to a Perrier profile.

Calcium - 160
Chloride - 19
Sulfate - 30
Sodium - 9.6
Magnesium - 4.3
Carbonate - 366
