I was in Short Stop today and they relabeled their Crawfish and Catfish poboys as imported swa and Chinese crawfish.

Delicious imported farm raised swai catfish fillets and imported Chinese crawfish tails both lightly breaded and fried crisp on the outside to seal in their delicious flavors. Served on french bread anyway you like it.

I don’t care what their excuses are - I refuse to eat any any restaurant on the Gulf coast that uses imported seafood. I can understand them serving that shite in Nebraska or something, but not in Louisiana.

Been in the food business for 30 years . Crawfish tails from China are firmer and hold up better . Just make sure and rinse . Gulf shrimp taste better , but also cost significantly more .

When you run the business and want to make a profit you do what makes sense. Unfortunately the greed of the Louisiana fisherman have cause many restaurants to go to a cheaper and more consistent product. It can be very hard to operate with a base menu when the price and product can fluctuate so drastically.
