I don’t care what their excuses are - I refuse to eat any any restaurant on the Gulf coast that uses imported seafood. I can understand them serving that shite in Nebraska or something, but not in Louisiana.

Been in the food business for 30 years . Crawfish tails from China are firmer and hold up better . Just make sure and rinse . Gulf shrimp taste better , but also cost significantly more .

When you run the business and want to make a profit you do what makes sense. Unfortunately the greed of the Louisiana fisherman have cause many restaurants to go to a cheaper and more consistent product. It can be very hard to operate with a base menu when the price and product can fluctuate so drastically.
