I use a 12qt Le Creuset enameled stock pot for gumbo, red beans, and other similar dishes. FWIW I don't use that pot to make the roux as I find it takes too long to get color with an enameled pot.

Thank you all for the responses, these are some good recommendations to look into.

Another question. Has anyone or have you know of anyone who has purchased a used magnalite, say from Ebay? I see one now, that feels like a decent price, looks to be in good shape and is actually close enough for me to pick up instead of shipping? 180.00 for a 13" 8qt?

I see you're out of state. I was going to say my FB marketplace is filled with antique shops in Louisiana selling original Magnalite pots.

I love enameled Dutch ovens (up to 8 quarts), but be watching eBay for knockoff magnalites. I bought one last year (never heard of the name), and it’s been working out great. Was about $120 or so for 12 quarts.
