Made this last year and Saturday decided to try it again, but with a few tweaks. Recipe mostly came from John Besh’s my New Orleans cookbook and Charcuterie by Ruhlman and Polcyn.

Besh recipe

And my recipe

Cooking down onions in Lard. Smells like my grandmas house when I was a kid.

I decided to smoke the pork shoulder for a couple hours before adding it to the pot.

Jarred to give out.

And on a cracker. Ca C’est Bon!

I just happen to have a butt waiting in the fridge. Looks like I’ll be giving this a try.

I've never had or heard of Rillettes. That looks awesome!
