What stores in the Metarie/River parish area chop ingredients for jambalayas. Have to cook one for work Xmas party and have full schedule nights before. Any recommendations

In the Baton Rouge area, most of the AG stores do. Sausage, onions, and temple meat/boston butt?
Contact Tony Matherne at Matherne’s in LaPlace, 100% certain he will.

You can buy chopped up trinity at any Rouses in the vegetable section. You still would have to cut up the chicken and sausage though, but chopped trinity saves a ton of time.

Only if your knife skills are pretty lacking. I made a couple gallons of jambalaya just 2 days ago and diced 2 medium onions, 1 large bell pepper, 4 stalks celery, half a dozen cloves of garlic, 1 large bunch green onions and a half dozen sprigs of parsley. Total time, about 15 minutes and that included getting them ready to chop from start to finish.

For 2 gallons of jambalaya? Your kitchen skills are lacking.

You wouldn't say that if you had a plate of it when done. I used homemade stocks including 1 qt. of fried turkey stock, 1 qt. of chicken stock, 1 pint of stock from when I made my boudin, one whole fryer and 1 1/2 lbs. of my homemade andouille.
The added rice put it about the 2 gallon mark on the pot, give or take a pint or so.
