Very true..

My grandfather owned a meat market in Opleousas in the 60's.
I remember the Andouille so heavily smoked to the point it was dry. The only thing you could do with it was beans or Gumbo's, but it's wonderful used like that.
Also remember the pounce (stuffed Stoumach)w/ gravy. Haven't seen that in ages

We had one for Christmas. You can still find them around Ville Platte in several of the meat markets.
