Smoking 2 chickens, they are ready but it's not time yet. Waiting for people to get here later, probably start them around 2pm.

How’s the sugar cane work? Is it green, or dried? Is it chunked up, or a long stalk of it? Can you get that at a Louisiana grocery store any time of year?

It’s a green sugar cane stalk. I buy it at Ideal Market. I cut it into small chunks and use it just like wood chunks.

I got some sugar cane this weekend. I think I’m going to smoke a chicken or some chicken quarters with it. I generally do chicken at 350°. Is it going to make a mess in my Kamado? Should I put the cane in a foil pan or tinfoil boat?
