If it’s freshly caught never frozen, I try to eat it like sushi/sashimi. That or I make poke bowls with it.
If frozen or not super fresh, I’ll rub a little olive oil/soy sauce on it, sesame seeds, whatever else you like. Sear it for 30 secs each side or until it’s got a decent crust. Try eating it with sushi/short grain rice, avocado, spicy mayo, chilli sauce, green onion, whatever else you can think of in a bowl.

I cook it all the time 3 1/2min per side
400 degrees, s and p and that’s it. I also make a relish to serve with it,
Nectarines, red bell pepper, red onion. You can look it up , red onion relish.

That looks perfect. If heat is high enough 1 minute is suffice, but yes 1-2 mins is your range. Enjoy!
