This is how it was in my house growing up:

Spaghetti with meat sauce = Mom has had a hard day but she's still willing to make you a quick home-cooked meal.

Beanie weenies and applesauce = Mom is tired and irritated but will whip up something quick and easy.

Peanut butter and jelly sandwiches with potato chips = Mom is worn out, grumpy so don't complain or talk back.

Dad is trying to figure out how to use the stove = Mom is pissed and you better not go near her for a while.

For healthy options pick up a roast chicken and have veggies , salad or guacamole with it.

I absolutely love egg tacos. I always eat them with avocado (mashed avocado, gaucamole, avocado lime dressing, etc.) and either caramelized onions, roasted poblanos, pan-fried potatoes, jalapenos, etc., or some combination thereof.

My favorite way is probably with fried potatoes, dark caramelized onions, and avocados just mashed with salt and pepper, and maybe some jalapenos thrown in there somewhere. Then again, caramelizing onions for an hour to get that beautiful dark brown color isn't quick. If I wanted to be eating in a few minutes, there is nothing wrong with eggs, jalapenos right out of the jar, and your avocado preparation of choice.

Breakfast

Bacon in a pan for 5 minutes. You can let bread toast for the time it takes to cook the eggs and poof you're done in about 10-15 minutes.
