Can you replace just the glass doors on a fireplace and if so, where would one purchase those?

If the doors are in iron frames, you can source tempered glass for them. Not sure of your set up so just taking a wild guess.

Any glass place should have some tempered glass for not too expensive at all. I don’t know where you are located, but in my area it would be Venable glass in Madison, MS
