You can switch brands all you want outside of competitive play. Some tournaments for higher handicaps allow it too. If the one ball rule is in effect, and its a local rule put in place by the tournament committee, then you have to play the same brand and model.
I'm not sure of the circumstances, but the ball you tee off with has to be used to finish the hole. If its lost or in a hazard, you can change numbers. In between holes, you can change numbers. You just tell the fellow competitors you're changing numbers, as long as its the same model.

"Bubba is the man.....I caddied a few times on the Tight Lies Tour (now Adams Pro Golf Tour) back when he was on it.....guys would just tell stories of how far he hit it....just take it over trees of 400+ yard dogleg par 4s to just short of the green and stuff"
If anyone has played Ellendale in Houma - Bubba hit driver on #1 and #9 all week with a huge high hook and was on the green or pin high all week
When I get to a computer I have a great story about a round I played with him back in the day (just don't feel like typing it now)

I heard he drove 15 at Ellendale, but I just can't see it

I had not heard that but I would not doubt it. Given the right wind conditions that hole does set up for his hook.
