Well my nephew started college as a sophomore. If he were to ‘redshirt’ and load up on classes he could technically be a junior as a ‘red shirt’ freshman.
Also wasn’t there a QB whose only class his senior year was ballroom dancing?
I think it was Leinart.

NFL teams were reportedly "turned off" by him because he came back to College and didn't go Pro after winning the Heisman.

Sure Leinart hangs around with TV stars now and then, but the
big left-hander from nearby Orange County didn't come back for his
senior season at USC to be a celebrity. He's back because he likes
being a college kid -- and he likes to win.
A sociology major, Leinart needs two credits to graduate as he
begins his fifth year at USC.
"School's done for me -- I'm here to concentrate on football,"
he said.
Leinart will complete his schooling by taking a class in
ballroom dancing with Cameron, a sophomore from Thousand Oaks who
plays on USC's women's basketball team.
"We both kind of figured, 'Let's take that.' We'll practice our
tango or whatever the heck they do -- the 1-2 step," Leinart said,
smiling.
Sure beats working.
That was 20 years ago...imagine now, if your NFL money is going to be Late round money (if you even make the roster) vs. College life and now Pro money? A very attractive option, this new College reality unless you are a slam drunk Top 10 pick...even then?

It's still way riskier to stay and make money in college.
The big money is in your 2nd contract in the NFL these days and thats why most players leave earlier if they have the option.
Ty Simpson passed on $6 million to stay another year because in 4 years that's potentially $60 million that he'd be missing out on by still being on a rookie nfl contract a year later.
$10 million like Bryce Underwood got is a load of cash... but Burrow is making $55 million a year
