I'm going to ask this not expecting a "good" answer.
Why aren't really good football programs recruiting a ton of pass catching TEs? They are just impossible to guard.
Get away from 4-5 WR sets and bring out the jumbo 4 TE set where you can run with bigger blockers and also dominate a passing game.
I know there aren't tons of guys out there, but some teams needs to start switching more to that

I mean I guess so, but there are probably 35 a year who are good TEs who are productive around the country. Programs just have a set number of TEs on a roster, so there isn't room for more.
If you have 10 WRs you only have like 4 TEs. If you made it 8/6 you could do a lot more with TEs.
Edit: I guess roster spots for gunners etc. in the NFL could make that difficult I guess.
Even if colleges can't do it, the NFL certainly could
