It's almost like they were trying too hard. The plot lines seemed way too contrived when compared to the first 5 or 6 seasons (which were comic brilliance).

The first one that comes to mind is the episode where Mary Hart was giving Kramer seizures.
Elaine: Kramer, what happened to your head?"
Kramer: "You know, I don't know. I was watching Entertainment Tonight, I got dizzy, fell, and hit my head on the coffee table."
I'm also a big fan of the Festivus episode. I've actually given people cards at Christmas telling them that a donation has made to the Human Fund in their name.
Elaine: Kramer, what happened to your head?"

What was the title/other plotlines of the episode where George stole the beach photo from his boss and took it to the photo place to remove his picture/then put it back in there? (Not my favorite episode, but it's one that I've only seen once and can't remember it that well/want to rewatch it).

This is objectively the best episode of the series. I base that on the fact that the Elaine plot is every bit as strong as the others'. Sometimes, hers can be a bit "fillerish".
So we have:
Jerry - dating manhands; jealous of all the time Kramer has put in on his new job
George - forbidden city
Kramer - working as a businessman
Elaine - bizarro world
