I am sure escape was a factor, but mainly so the "centipede" would act as one and have to function as a unit. Leaving the knees on would have made it terribly difficult on all parties.
There is a scene where the Japanese kid (the head) has to tell the others (in Japanese, nonetheless) 1-2, 1-2, 1-2...so they could all move along together.

The ATM in this movie isn't THAT horrific. It's more disturbing as you see the doctor show the three "parts" his surgical procedure while they are trapped in their beds.
