I'm on this train with Chigurh. Part of how he works in the movie is that he's not particularly comprehensible or understood.
He just is. That's part of the new, incomprehensible evil the sheriff runs across.
To add one, the book Jurassic Park has a part detailing how raptors escaped to the Costa Rican mainland prior to Hammond inviting Grant and the rest. They're pack hunting small mountain villages.
I would be so down for that as a Jurassic Park prequel. Have Ingen trying to capture them.

I'm generally not a big fan of prequels mainly because I don't necessarily need to know how the clock was built to be told what the time is. Also, I like to see what happens next in a story.
With that said I'll have a go at it:
The Matrix
Warehouse 12 (If you saw Warehouse 13 you would get it)
Star Trek Enterprise B: There is about an 80 hole in the star trek series after Kirk died until the Enterprise C which was at a time when tensions with the Klingons and Roumans were extremely high.
James Bond: The Beginning. How he was orphaned was selected to become an MI6 agent with hopefully a lot of Politically Incorrect moments.
With that said I'll have a go at it:

I want a movie about the Syracuse Bulldogs that lines up with the series of events shown in Slap Shot. The behind the scenes machinations as they put together a team of assassins to take out the Charlestown Chiefs. Watching them go out and find Oglethorpe, Dr. Hook McCracken, Mad Dog Madison, and Screaming Buffalo Swamptown.

There's a bit of trepidation with how that series will treat some of the source material. The Hobbit " TRILOGY " went pretty far off script and some are suggesting that possibly extremely unnecessary alterations , that would fit a current social agenda , may find its way into the writing of some of the characters.
We'll see.

I want an Ethan Hawke free Training Day prequel with Alonzo and his crew getting rich off of criminals like Rodger. That would make a good series too.
A The Big Lebowski prequel would be good because every day of The Dude's life would be entertaining. I want to know how much drugs it took to get him the way he is.
A The Usual Suspects prequel that would be the Kaiser Soze Story.

From Dusk til Dawn 3 is actually a prequel set in the old west. It goes into the history of that temple/Titty Twister. Its not bad.
