Faith Ford has done a pretty good job, for a native-born gal done good. John Larroquette, as well, for acting - multiple Emmys.
Anne Rice, certainly an international sensation as a writer.
Too many chefs to mention, notably Prudhomme.
Industry - Andrew Higgins
People who have adopted the state in a high profile fashion, include Emeril Lagasse, John Goodman, Shaquille O'Neal, Brad Pitt/Angelina Jolie, Delta Burke/Gerald McRaney.
Athletics - Kevin Faulk comes to mind as a native-born. Charles McClendon, Dale Brown and Les Miles all come to mind as sports figures (coaches, in this case) who adopted the state - to a lesser degree the Maraviches (especially Pistol Pete) will fall into the adopted category.
Politics, obviously Huey Long put Louisiana on the map, from a political perspective. Uncle Earl, Russell and Gillis Long all flow from that same family tree.
James Carville, like him or not, represents the state - and his wife Mary Matalin, has adopted the state.
Music - Louis Armstrong stands out from the rest. Perhaps Jerry Lee Lewis (whose checkered reputation might take him out of the "represented" but supremely talented) for pop/rock music. (ETA: How could I forget Antoine "Fats" Domino?)
Obviously many, many Zydeco musicians are from here. Wayne Toups, Buckwheat Zydeco, etc.
There are a whole bunch of people that would be right there in music - Tim McGraw, Kix Brooks, Lead Belly, Eddy Raven, Bobby Kimball, Philip Anselmo - just dozens, including bands like Zebra, Better than Ezra, Nola, etc.
ETA: Bradshaw and Bill Russell should be on my list.

Shaq is not from Louisiana. He was born in NJ and went to high school in Texas. I know a formality since he represents the state so well.
