Because Judaism was always an ethnic religion. Christianity, once it was adopted by the Greco-Roman world became a universalist religion. Again, you can convert to some forms of Judaism even if your mother isn’t Jewish, but it is a much more involved process.

I think location is also important. You need to be in a major city for the network to take effect, like Long Island, NYC, LA, etc. Being in a random location like Louisiana won’t help.

That you are converting because you feel Judaism is the best path to hearing God's word and you aren't converting for anyone else. Even though most conversions are because of marriage.
But you have to give up cheeseburgers and meat with dairy and pork and shellfish.
