There any many good non-alcoholic beers, quite a few decent non-alcoholic wines. I’ve not yet tasted a good non-alcoholic liquor, including any non-alcoholic whiskey.
The main problem is that alcohol is of course a flavor carrier. That can be addressed by using other flavor carriers, but for something like bourbon especially, it’s difficult to replicate. To replicate that, the makers of non-alcoholic liquors use capsaicin, which gives those drinks a slight pepper flavor, which doesn’t quite work.
