Frozen turkeys are taken down to 0 and below.

A "fresh" turkey has never been chilled below 26 degrees.

I got a fresh one on Tuesday at Whole Foods. (His name was Timmy, and he was a vegetarian who liked to take long walks in a pasture.)

He was fairly frozen, just not bowling ball hard like the sub-zero ones. Sat in the fridge until Saturday when I took it out to brine, and it was still plenty stiff with ice crystals inside.

Oops, someone slept through micro. Salmonella is easily killed by heat.
I’m just thawing a turkey not eating it raw.

There's plenty of ways to thaw one turkey out before tomorrow. Put it in a pan, set it out and turn a fan on. Or fill the sink up with water and put the turkey in there, drain the water and refill it every couple of hours.

My MIL, who knows nothing about cooking and who is a worry wart, got a turkey at Thanksgiving and also had no idea how to thaw it. I said a sink full of water will do it in a few hours. Then upon watching it thaw and seeing it float, she became worried about bacteria growth on the part of the turkey that wasn't submerged.

If you are going to flash thaw something, you should run cold water over it...this is an accepted practice by the health dept. leaving in still water is a violation...
bottom line bacteria need temp and time to grow...it takes 4 hours of something being over 41 degrees for bacteria growth...what people don’t realize is that bacteria can grow on a small part of an item and cause issues...so turkey still frozen in middle but outer portion over 41 degrees can equal food borne illness.

But that’s not constant running water, which is what the Health Dept requires... at restaurants.

At home we all do plenty of things in the cooking process that aren’t up to health code.

She will never try a suggestion for process or results improvement since she has “always done it this way” and poopoos any recommendations/suggestions. Now she is a really good manager of her and FIL’s daily stuff but complains about some of the routine stuff.
I quit suggesting things for my own sanity. Love her much though!
