I don't think "exhilarating" is the right word LOL
I really can't wait until it is warmer so I can swim. I have access to a big indoor pool, but I'm still not getting in water when it is this cold.

I dont really have a recipe but use sausage and either pickled pork or tasso so how I cook them probably isn't to your liking

But I just boil the beans to "de-gas" them.
Saute some onions, green peppers , green onions then add some water, add all the ingredients and let it cook down or until the beans are soft

When you cook the rice, sub at least 1/2 the water with chicken broth.
Soak your Camillia beans for 1-2 nights. Change the water a few times.

I do water therapy in an indoor heated pool and it is fine when it is cold outside. But I don't go when the roads are a mess with ice like they are now.

I like red beans with leftover ham just like in white beans. I have used Dandy Don's recipe online for white beans and just used red beans.

We generally only cook white beans 2 times a year. Once after Thanksgiving and Christmas
We have a bone in spiral ham each of those times so whatever is left over goes into the white beans
