Pressure Cooker Chicken & Potato Stew
This makes 10 hearty servings (5 days for 2 meals).
Nutrient Amount
Calories 480 kcal
Protein 36g
Fiber 14g
Total Fat 8g
Ingredients: 3 lbs diced chicken breast, 2 lbs diced potatoes, 1 lb dried red lentils (rinsed), 1 bag frozen mixed veggies, 1 jar salsa (or 2 cans diced tomatoes), 4 cups chicken broth, 2 tbsp garlic powder, 1 tbsp cumin.
Instructions: 1. Dump all ingredients into the Pressure Cooker. 2. Set to High Pressure for 8 minutes. 3. Allow a 5-minute natural release, then vent. 4. Stir well; the lentils will "melt" to create a thick, high-protein sauce.

I use AI for work all the time. Just dumped a bunch of info in there last week and had it make business processing documents for me. Turned out great.
I'm working on piecing together summer camps for the kiddo now, I could probably get AI to do that for me too. So far I have invention camp, zoo camp, sports camp.

It's good. I went a little more heavy on the indian flavor and added in some turmeric, garam masala, coriander, and mustard powder.
